However, looking for knives that require sharpening as rarely as possible, it is worth paying attention to models made of high hardness steel - above 60 HRC. They will be less prone to dulling, however, also more demanding when sharpening. Excellent sharpness retention is characterized primarily by models made of high-grade powder steel, such as CPM-S90V.
