In this process, the smoke is only lightly wafting around the meat. Cold smoking is carried out in low-temperature smoke up to 24 ° C. The duration of such a process is several hours in the case of sausages, up to several days in the case of hams. However, it is worth waiting because ultimately you get durable products, suitable for storage for several months.
All work should be done intermittently, you run the generator as indicated by the recipe, but usually for 2 hours in the morning and two hours in the evening. The maximum temperature reached by the generator heater is 40°C. The ZW-01 attachment lowers this temperature for cold smoking.
You mount this element to the generator and then connect it with a spiro pipe to the chamber. The length of the smoke tube should be within 1,2-2m. Installation of all such construction is quick and easy, it is characterized by stability and cleanliness of use.
